Alex was diagnosed with type 1 diabetes in May 1999 at the beginning of his culinary career. At the time, managing diabetes in a fast-paced kitchen was challenging, and he often faced misunderstanding and judgment while trying to manage his insulin discreetly. Over the years, diabetes became a source of strength, teaching him discipline, resilience, and how to stay one step ahead in both life and work.
Living with diabetes requires constant awareness and planning, from carrying sugar to managing stress, movement, and daily routines. These lessons extend beyond the kitchen into his roles as a partner, friend, and new father. Cooking is how Alex expresses himself and brings people together, while movement—dancing, climbing, running, and being outdoors—is where he feels most free. Becoming a dad shifted his perspective, focusing less on ego and more on showing his daughter how limitless life can be.
Alex believes diabetes is part of his story, but it does not define or limit him. With awareness, adaptability, and a different rhythm, anything is possible—and sometimes, being a little different is your greatest strength.
